Homemade Thin Mint Girl Scout Cookies

It’s girl scout cookie seasonnn! Have you gotten your fix from your local girl scout? If you haven’t please do, as an alumni girl scout (is that a thing?), I can vouch for how good they are. Shout out Troop 5876! 😂

Whether or not you decide to buy some cookies this year, you can always learn how to make your own homemade versions of the cookies. And this week I tried to make my own thin mint cookies! They came out pretty darn close too!! Are you ready for my secret recipe?!

Lets start with what you will need. Like most cookies we will start with butter, sugar, and brown sugar, creaming that together.

If you remember my blog for Mint Chocolate Chip Ice Cream Cookie sandwiches then it is a similar recipe to that!

Most of the  altering that came with the recipe is the addition of mint extract with vanilla. Of course mint is a pretty potent extract so we won’t use a ton.

Can you guess whats next? Dry ingredients!! Add in the cocoa powder, flour, baking soda and salt. You don’t have to use a specific brand of cocoa powder, but I DO have to say that the Hershey’s brand has been my absolute favorite to use, it gives such a great, deep chocolate flavor.

After mixing these ingredients at medium speed for a while you will have a pretty crumbly mixture which is perfectly normal. This is before you’ve added the last ingredient, the milk. For me I was able to use 5 tablespoons of milk to get the consistency shown below.

If this is not what yours looks like be free to add more milk gradually until it does. You want the dough to be roll-able for the next process of making these cookies. (To be honest, the fun of this recipe has only begun)

Now set up your space with parchment paper, your rolling pin and a little mix of cocoa powder and flour as your base so the dough does not stick to the parchment or granite counter if that is what your using. How much of a difference does it make if you don’t use the cocoa powder? Probably not much, but when doing my own research that’s what I noticed everyone else does. Better safe than sorry!

So now you want to roll out the dough to a good ¼ inch thick, or try to guesstimate based on the thinness of the thin mint cookie.

For cutting out the cookie, I found the perfect shape cutter from my Wilton’s 100 Piece Set, but you can always use a small circle instead. Hell, if you want to make triangles you can they are homemade; hence, do whatever you want!

After removing the leftover dough from around the cut out cookies, I wanted to try to make the little dots that you see in the thin mint cookies. I do have to say this part was a bit pointless based on the look of my final product. I made little holes all around each cookie and put them on the baking sheet to go in the oven. I obviously wasn’t thinking because the cookies did slightly rise causing the holes to totally disappear. As well as the fact that I am covering them in chocolate after… What were you thinking Deirdra???! I am a sucker for aesthetics, but this one didn’t totally work for me :/

While your cookies are baking in the oven this is the perfect time to melt your chocolate in 30 second increments until melted throughout and add just a little mint extract, then combat the thickness of it with a little oil to thin it out again. You can taste the chocolate and make sure its minty enough for ya. I personally used a semi sweet chocolate, but it is up to you whether you want milk or dark chocolate.

Bake your cookies for about 10 minutes or until bottoms are slightly hard. Sometimes it is hard to tell when they are done because they are dark cookies, so be careful! Let them cool for 15 minutes.

Setup your station for the dipping portion!!

This was by far the most fun part of making these cookies. Take your fully cooled cookies and dip one side into the chocolate,  flip and dip the rest. Make sure to shake off as much excess chocolate as possible, making sure your cookies don’t have a super thick layer of chocolate AND that you won’t run out of chocolate too quickly.

Once you have repeated for all your cookies throw those babies on the parchment paper and into the fridge until hardened.

TADA! Done. If you want to be fancy, I drizzled some of the extra chocolate on top of the cookies to make a cute design. Like I said I love aesthetics 😂. Now enjoy your “Faux” Thin Mint cookies and please tell me how they came out for you in the comments below!!

homemade THIN MINT cookies

Ingredients

  • 1/2 c butter
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1/2 tsp. vanilla
  • 1/2 tsp. mint extract
  • 1 c. flour
  • 2/3 c. unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 5 tbsp. milk

Dipping Chocolate

  • Semi Sweet or Milk Chocolate Melting Chips
  • 1/4 tsp. mint extract
  • 1 tsp. oil

Directions:

  1. Preheat the oven to 350°F
  2. Add the butter, brown and white sugar to an electric mixing bowl and cream together. Add the vanilla and mint extract, then mix in.
  3. Sift the flour and cocoa powder into a mixing bowl and mix in the baking soda and salt.
  4. Add the dry ingredients to the wet, mixing until crumbly.
  5. Add the the milk 1 tablespoon at a time until it becomes a roll-able cookie dough (may be less or more than 5 tbsp).
  6. Take a little flour and cocoa powder and use as base to roll out the dough on
  7. Roll into a slab of about 1/4 inch thick, then use a small circular cookie cutter to cut out each cookie
  8. Poke holes in the cookies similar to girl scout thin mint cookies if desired
  9. Bake for about 10 minutes. The edges will be firm but the cookies will still be soft in the middle. This is fine, they will firm up as they cool.
  10. In another bowl melt the chocolate and mix in the mint extract. The extract will cause the melted chocolate to become a bit thicker, so add in a bit of oil to thin out again
  11. Dip cooled cookies into the chocolate to fully cover and shake off excess chocolate
  12. Lay on parchment paper and put in the fridge until hardened and voila! Enjoy!
